Razzleberry pie!

I attempted a spelt pie crust today for the first time (since it's easier on our stomachs than wheat). It wasn't quite the same, but it wasn't too bad. This morning I made gluten-free banana pancakes with peach topping. I tend to do most of the cooking on the weekend and on vacation because Mike does it daily, and I do like to cook. Often I tend to be overambitious, though, as is my wont in many things!

Chris declared the spelt pie crust to be better than the usual--sweet boy. I'm not too sure about that, but at least Mike and I got to eat pie. :)
